Eating out of their own hands

The new generation of conspicuous consumers doesn't want catering handed to it on a plate.

"There's a shift in the style of entertaining," says fledgling caterer Savva Saavas, who describes himself as a "new generation caterer". His company, Plated, whistles up mud crab, mango and mint nori rolls and poached yabbie in lime buerre blanc for supper parties from 10 pm. "It's all about theatre," he says. "The three-course dinner, where people are trapped for hours, is outdated and stale for this crowd. They don't have the attention span, they don't want to do what their parents did."
